Growing up in upstate New York, meat and potatoes were a way of life (or in our case, meat and rice). My stepfather was a master at preparing meats to perfection. As a roast cook at Grossinger’s Catskill Resort Hotel, he prepped rows of prime rib for 1,000 guests on a holiday weekend. (Some of the tastiest bites I’ve ever eaten were the unwanted end cuts he’d bring home in a gallon-size industrial tomato can.) When I was old enough to land a job in his kitchen we cooked countless pieces of glistening red Char Siu Roast Pork (this page) together at the Holiday Inn. The recipes in this chapter encompass a medley of pork, beef, and lamb dishes from our family archives.
